Mango Yogurt Bowl
Mangoes are one of my favorite tropical fruits. Growing up with an abundance of mangoes in my grandparents house, I never thought I would one day crave for some sweet mangoes. Finding sweet ripe mangoes is merely a luck now a days. Its a hit or a miss. We can get hold of sweet mangoes only in summer. That too for a very short period of time.
When I saw the try me packs of Selefina's mango juice powder, I never had to think twice to get some try me packs and try some recipes. This mango yogurt bowl is purely a getaway to some tropical island when you have the first spoonful of the creamy lush mango yogurt. The mango juice powder gives the thick consistency to the yogurt and gives that creamy texture. This was a hit in my family. Even the picky eater said 'so good' to this bowl of mango yogurt.
Its so convenient that these try me packs are readily available at Selefina and we don't need to wait for mango season to enjoy some Mango yogurt bowl. These are perfect for the 90 degree weather we are having in this summer to cool us down.
Yields : 2 bowls/2 servings
Ingredients:
2 cups - milk
2 - try me packs Selefina Mango juice powder
3 tbsp - granulated sugar
1 tsp - plain yogurt
Fruit bowl
Mango yogurt
Fruits of your choice
Chia seeds
Granola
Directions:
- Boil the milk in a sauce pan by occasionally stirring with a wire whisk, to prevent the skin formation.
- Once the milk boils, turn off the stove and add the sugar and the mango juice powder. Using the wire whisk mix well the lumps till all the mango juice powder dissolves completely.
- Let the mango milk mix cool and come to 100°F - 115°F. Use a food thermometer to check the temperature if not sure. It should be slightly warmer than lukewarm.
- Transfer it into a glass jar or bowl. Add the plain yogurt into the mango milk mix and stir well. Keep it covered in a warm place to incubate and the mix to convert into thick yogurt. It will take anywhere between 8 to 12 hours based on the temperature where you live.
- Once the yogurt is set, keep it in the refrigerator till ready to use.
- Spread the mango yogurt in a serving bowl. Top it with fruits of your choice, granola and a sprinkle of chia seeds. Enjoy them as a quick breakfast or healthy snack.
