Spicy Shrimp Skewers with Browned Garlic Coconut Sauce



Looking for a spicy appetizer for Labor day, then you are at the right place.  This is one such appetizer you don't need to make just for get togethers.  You can treat yourself with these spicy Shrimp skewers and the Browned Garlic Coconut sauce.



The browned garlic creamy coconut sauce perfectly pairs with the spicy shrimp skewers.  The best part is that you can prepare this appetizer under 30 minutes.


A pack of easy peeled shrimp is so handy when you want to whip up a meal or an appetizer.  I always keep a bag of peeled frozen and deveined shrimp handy in the freezer.  Already peeled and deveined shrimp helps to cut down the time to prepare this appetizer.  Do give this recipe a try.



Yields - 10 short skewers

Ingredients:

Shrimp Skewers

12 oz - peeled and deveined shrimp washed and pat dried

2 tsp - paprika powder

1 tsp - smoked paprika powder

1/2 tsp - cayenne pepper powder

1/2 tsp - ground pepper

1/2 tsp - dry chili flakes

1/2 tsp - garlic powder

1.5 tsp - dark soya sauce 

1 tbsp - oil

Short bamboo skewers

1 - 2 tbsp - oil to pan fry shrimp

Melted butter to brush the skewers

Coconut Sauce

2 - big cloves garlic minced

1 tbsp - butter

1 tbsp - all purpose flour

3/4 cup - coconut milk

salt, pepper and chili flakes to taste

Garnish

Chopped spring onions

Directions:

  • Soak bamboo skewers in water.
  • Marinate Shrimp with all the ingredients listed under Shrimp skewers for 10 minutes.  No need to add salt to this marinade as dark soya sauce has enough salt.
  • Coconut Sauce - melt butter in a sauce pan.  Add the minced garlic and cook till golden brown.  Mix the all purpose flour and cook for a minute on low flame.  Add the coconut milk and cook it stirring till it thickens.  Season with salt, pepper and chili flakes.
  • Shrimp skewers - thread 4-5 shrimp on the each skewer.  Heat a cast iron pan on medium heat and add 1 - 2 tbsp of oil.  Place the skewers on the pan and cook the shrimp for 3 minutes on each side till the inside is not translucent anymore.  Prepare rest of the skewers the same way.  
  • Brush the melted butter on the shrimp skewers.  Garnish with chopped green onions.  Serve the Spicy Shrimp skewers immediately with the creamy browned garlic coconut sauce.
